Material is stored in 65-gallon carts located throughout food prep and dishwashing areas, or on the loading dock. Rams Head actually uses a food waste pulper, which removes a large percentage of moisture form the compostable waste before collection in the carts. Carts are brought to a staging area when full. The material is collected by Brooks Contractors 6 times/week and composted at their facility in Goldston, NC. This program was borne out of a pilot program run at the University during the Special Olympics in 1999. The current system has been in place since mid-August 2000. Based on current tonnage figures, we estimate a waste stream diversion of 260 tons/year of food waste. The annual tonnage diverted will increase as the program expands.
